章魚燒麵糊 Takoyaki Batter

材料 Ingredient

中筋麵粉 All-purpose flour1 杯 cup
柴魚高湯 Bonito stock 1-3/4 杯 cup
鹽 Salt 1/4 小匙 tsp
醬油 Soy sauce 1 小匙 tsp
蛋 Egg2 個(大) large

做法﹕
1.把麵粉和鹽過篩到一個大碗內。
2.蛋加冰水和柴魚醬油打散。
3.將冰蛋水加入麵粉拌勻,攪拌時動作要輕以免出筋。



做法﹕
1.Sift the flour and salt into a big bowl.
2.Beat the egg with the ice bonito stock and bonito soy sauce.
3.Mix the flour with the egg water. Gently fold the flour to avoid producing gluten.
